Warm Spinach & Chickpea Salad

I love to make this salad especially on a cold day.  I came up with this recipe while preparing dinner one night. I had some fresh spinach but was not in the mood for a cold salad and wanted something warm and hearty. I found some chickpeas in the pantry and decided they might be good with the spinach.

I wilted the spinach in a sauté pan, then added the chickpeas and some spices and Voila! I created a hearty warm salad in just a few minutes!

Spinach and Chickpea Salad

3 tbsp olive oil

1/2 yellow onion, diced

2-3 garlic cloves, crushed

1/2 tsp ground cumin

1/2 tsp sweet spanish paprika

6 oz chickpeas (garbanzo beans), drained and rinsed

2oz bag of spinach, trimmed and washed

1 tbsp sherry vinegar

1/2 cup warm water

1 lemon, washed and cut in wedges
Sauté the onions in olive oil for 2 minutes. Stir in the garlic and cook for another 2 minutes. Add the spices to warm. Do not overheat or the spices will burn. This step should only take a minute. Add the chickpeas, spinach, vinegar and water, then simmer for 5 minutes or until the spinach has wilted and the other ingredients are warm. Serve warm with a slice of lemon.

From a nutritional standpoint, Chickpeas or Garbanzo Beans are full of fiber and help control blood sugar and insulin secretion. While Spinach is loaded with magnesium, potassium and iron and is very versatile.  It can be wilted and eaten in a salad, served as a creamed vegetable and is delicious warm or cold.

This warm salad is fast and healthy since it only takes a few minutes for the spinach to wilt. It is a wonderful side with meat dishes or is delicious as a vegetarian main course.
