This recipe is healthy and tasty. My daughter, Ashley and I decide to play together in the kitchen today. Ashley has a great palate and knows how ingredients work together, however in the kitchen the rule is I clean as I go…..definitely this is not her rule:). She does not mind working with chaos around her!
Quinoa is a seed that originated in south America, known for its amino acids like lysine, and acceptable quantities of vitamins like calcium and iron. It is versatile since you can use it for savory dishes and sweet dishes.
Arugala Salad with Quinoa Cakes
4 tbsp of plain yogurt
5 tbsp of light olive oil
2 tbs of lemon juice
2 tbsp of fresh mint chopped
1/2 tsp of garlic paste
salt and pepper to taste
Combine ingredients until thoroughly mixed.
1 c of uncooked Quinoa ( when cooking the Quinoa follow direction on the bag)
1 1/2 c of garbanzo paste (the garbanzo is of course cooked then pulverized in a food processor)
zest of one big lemon
2 tbsp of potato flour
1/2 tsp of fleur de sel or kosher salt
3 tbsp of oil to fry per 4 patties
Mix all the ingredients together, the mixture should hold its shape and allow you to mold it in a 1/4 measuring cup, then make patties.
Heat the oil, and drop 3 or 4 patties at a time, let them cook for 4 minutes on each side until golden crisp.
Remove from heat set aside and continue until done.
2 c of Arugula
2 c of mixed greens
1/4 c of sun dried tomatoes
1/4 c of feta
1 can of artichoke, rinsed and sliced
kalamata olives (optional)
Combine the ingredients, beginning with the Arugala and mixed greend. Assemble the salad and drizzle the dressing on it top with the Quinoa patties . Garnish with mint if you desire.
