Through the month of May, we ran our first ever Pairing Contest. Fans of this blog were encouraged to choose any of our recipes, and suggest a wine or spirit that would make an appetizing pairing. Here’s the winning entry!
May Contest – Dare to Pair
ALMONDS ROASTED IN DUCK FAT & ROSEMARY; This is a great snack to sip with your Alvear Carlos VII Amontillado Sherry from Montilla-Moriles. The wine has enough body and structure to stand up to the bold flavors of the duck fat and rosemary, as well as an inherent nutty character that bridges the almonds. PEAR TART WITH CUSTARD; Certainly a well deserving dish of a Domaine Huet Vouvray Moelleux “Clos du Bourg”, with enticing complements of sweet pear and quince of the Chennin Blanc. But, there are so many other wines I could think of that would also be delectable! I have to point out a few other of my favorites – Chateau D’Yquem, Sauternes or Chateau Dereszla, Tokay Aszu 6 Puttonyos. DUCK CONFIT SALAD; the game-rustic flavors of the duck are craving something earthy, organic, and equally rustic, but nothing to bold to pull away from the delicate balance of the salad. I’d recommend a Domain Rouete, Chinon “Cuvee de Battereaux”, a nice Cabernet Franc to accompany it.
