Thai Coconut Coffee Shots with Mint Simple Syrup

This closer was a last minute decision!  Simple syrup is “simple”.  Maybe that’s how it got it’s name!  This coffee “shooter” was a surprise that the 2 chef’s came up to end the “Thai-delicious” meal.  It was smooth, creamy, minty and noy very sweet but full of flavor. The coconut milk (unsweetened) had the same body feel as heavy cream adding a super creamy texture to the drink.  Think liquid ice-cream and you’ll have a feel for what this little surprise was like!

Thai Coconut Coffee Shots with Mint Simple Syrup

1 oz coconut milk, unsweetened

1 tsp mint simple syrup (recipe follows)

1 tbsp very strong coffee

mint leaves for garnish


We used a 2 oz tequila shot glass to make these drinks.

Put the above ingredients in the shot glass in the order listed.

Then refrigerate until ready to serve.  You can make these several hours ahead of time.

When ready to serve the coffee will be on the bottom of the glass.  We slightly stirred the coffee to make swirls in the coconut milk.

We cut straws to be about 2 inches taller than the glass and put baby mint leaves in the top of the straw as the garnish.

If you want to make a larger drink just increase the proportions according to how many ounces you glass holds.

Mint Simple Syrup

1/2 c sugar

1/2 c water

5 mint leaves, washed and patted dry


Combine sugar and water together in a small saucepan.  Cook over medium high heat for 5 minutes until the sugar is dissolved.

Take simple syrup off the stove and add the mint leaves and stir.  Let the mint infuse the simple syrup until the syrup has cooled then remove the mint leaves.

Lasts in an airtight container for up to two weeks.

coffee, coconut milk, frangelico

coffee, coconut milk, bailey’s irish cream

I was actually looking for non aloholic drinks for a childrens party when I canme accross your recipe, I love mint and I love coffee and I love coconut milk , no brainer that I would enjoy this and I did. I often flavour simple syrup with ginger and fresh fruit peel ( orange, lime and lemon) which I keep in the fridge to make lemonade or go into cocktails; not thought about a mint one. Thanks, I like the rest of the site too, some good recipes. Going to try out the Grilled Thai Chicken Satays.
